A recipe from China: Rice noodles fish

In a short period of fewer than two months in Canada, the difference between Canadian food and Chinese food I have found is that Chinese have developed various methods to cook food such as pan-frying, stir-frying, quick-frying, stewing, steaming… while in Canada might be less, like baking and deep-frying. Of course, both of them are delicious.
The recipe I would like to talk about is “Rice noodles fish”, which is a famous dish in my hometown. It was a treat for the first president of China; he praised it as “Four stars watch the moon”. I learned how to make it because my family and my best friend all like it very much.
List of ingredients:
-A grass carp (500g)
-Rice noodles (400g)
-Lettuce (30g)
-Soy sauce (100g)
-Ginger (50g)
-Shallot (100g)
-Chilli sauce (125g)
-Sweet potato powder (150g)
-Rapeseed oil (150g)
-MSG (5g)
-Salt (3g)
How to make the rice noodles fish
-Clean the fish, then cut it into strips. Put them into a bowl.
-Put ginger pieces, MSG, salt, soy sauce, and chilli sauce into the bowl which contain the fish strips.
-Mix them for a few minutes, and then stir with sweet potato powder.
-Clean the lettuce and put it in the pot, cover with rice noodles.
-Boil as it comes to medium well and mixes with the flavouring above.
-Put the fish strips on the rice noodles, cook with cover for 20 minutes. After open the cover, sprinkle some green onion above it.
