A recipe from Palestine: Palestinian Musakhan

How to Cook Palestinian Musakhan?


- Canadian food has a big difference in comparison with Palestinian food. Palestinian food is so spicy and usually meals served with bread and rice. Canadian food usually served with cheese and potato.

- Musakhan is the most popular cuisine in Palestine. This dish has a very long history with Palestinians for a long time ago. Also, when families decide to have an outing or gathering they provide Musakhan to show hospitality and stick to the tradition.



- List of the ingredients to cook Musakhan :


- Chicken divided into 4 pieces

- A ¼ spoon of sumac

- A 1 table spoon of cinnamon

- A ½ table spoon of cloves

- A ½ table spoon of nutmeg

- Sea salt and black paper

- 2 cups of Olive oil

- 1kg onions divided into small pieces

- Taboon bread (Palestinian bread) or pita bread


How to make Musakhan:


- Use a bowl to mix the chicken with sumac, cinnamon, spices, salt, and black paper. Put some vinegar and refrigerate for 30 - 60 minutes.


- Preheat oven to 350°F.Put olive oil in a skillet over medium or high heat. Add the chicken, cook it until it shows brown, and put it in a plate.

- Put the onions in a skillet and fry them, whisk them well by spatula for 25 minutes until they show brown.

- Use a large baking dish to gather the chicken, onion and pita bread together. And don't forget to sprinkle pita bread with water to keep it clammy.

- Place the baking dish into the oven for 2 hours maximum until the chicken cooked enough, try not to burn the bread while cooking.

- Take the baking dish out of the oven by using oven mitts, leave it for 10 minutes to rest. Serve it with a big plate, also you can put extra onions and pine aside.
